SUSHI LOVERS can rejoice as a Japanese restaurant on a roll arrives in Dunfermline this month.

Koku Shi is expected to launch on Carnegie Drive in the coming weeks after building a loyal fanbase in Kirkcaldy.

After falling in love with Japanese cuisine in Poland, Jerzy Urmilowicz and Monika Michalski decided to open their own restaurant and they can’t wait to start welcoming customers in Dunfermline.

Monika told the Press: “We’ve had a huge response to the news that we’re coming to Dunfermline.

“It’s fantastic to see that reaction. A lot of people from Dunfermline visited us in Kirkcaldy. Now it will be closer to home for them.

“We think that Dunfermline is a fast-growing place that has a lot of potential, especially for small family-run businesses.”

This month marks the three-year anniversary of the co-owners becoming the first Japanese restaurant to open in Fife.

Their new home on Carnegie Drive will have between 60 and 70 covers with customers able to bring their own bottle.

They pride themselves on having a diverse menu with “something for everyone,” including a unique Highlander menu featuring haggis sushi – a meal they believe to be a world first.

Monika said: “We don’t just offer sushi. It’s a fusion. There’s so much more on offer for everyone. We also have a Vega Shi range for vegans. We have a brilliant big menu for all dietary requirements. It’s a pretty amazing menu, actually!

“We won Japanese Restaurant of the Year (Central Scotland) at the Scottish Asian Food Awards last year.

“It’s healthy, too! We’re so proud to be able to offer healthy, amazing food.

“Japanese food is very popular in Poland. We like innovative food and we fell in love with Japanese cuisine.

“We’ve learned new things every year in Kirkcaldy and we’re enjoying the journey. We’re learning more and more every year.

“We had been thinking of opening a new place for about a year. We weren’t sure whether to open in Dunfermline or Dundee but we couldn’t find a premises we liked in Dundee. We then saw this place in Dunfermline and we knew it was the right spot for us.”

Koku Shi will take over the space previously occupied by Retros Bar and Restaurant at 41 Carnegie Drive.

A target date for opening hasn’t been confirmed but the owners expect to be open for business in the “first half of May”.
