HOMEMADE bridies and pies are on everyone’s lips in Cyprus thanks to one Dunfermline man and his business.

Derek Blair launched Flour of Scotland in April and has wowed locals ever since.

It all started when a friend of Derek’s, also from Dunfermline, arrived back in Cyprus to self-isolate after receiving cancer treatment in the UK.

With not a Stephen’s or Greggs in sight, Derek created his own recipes and offered his pal and other friends samples to taste.

Their feedback was so encouraging that Derek and his partner made the move to launch an online bakery in Paphos, selling a range of products for delivery.

Derek told the Press: “You can’t get bridies or pies here so we decided to take matters into our own hands.

“I know what the Scottish pallet likes. As I’ve always loved cooking and baking, I thought this would be a great time to put that to use with my friend self-isolating. He’s loved it and so has everyone we’ve delivered to. It’s gone crazy over here and there’s a real demand for it.

“Someone told us that we were like a Michelin Star version of Greggs!”

Flour of Scotland now supplies to shops, cafes, kiosks and also offers a meals-on-wheels service.

Derek believes their success comes from selling a number of items at once, rather than one or two goods in-store, with their average sale at around €30.

The company has since moved out of their home bakery and into a commercial premises.

Derek is now offering up franchises in Scotland for anyone looking to start their own business from home at an estimated cost of less than £3,000.
