Karen Rhodes, 51, of Chapelwell Place, Dunfermline, has admitted the offence.
She submitted a guilty plea by letter to Dunfermline Sheriff Court.
She admitted that between December 27, 2018, and March 19, 2019, at Shell Filling Station, Admiralty Road, Rosyth, while an employee there, she embezzled £2,000.
Sheriff Alastair Brown called for reports and Rhodes will be sentenced on February 10.
